BOREAL AMBER Birch Syrup Blend is produced in a similar way to our pure syrup. The sap is concentrated to 45 degrees Brix and finished (stabilised) with either fructose or organic evaporated cane sugar (sucrose). The blending of the concentrated sap with a sweetener results in a slightly milder syrup. We find this product a little sweeter than pure syrup

 

BOREAL AMBER Birch Syrup Blend is crafted using a traditional process similar to our original syrup. The clear sap of the paper birch (Betula papyrifera) is harvested in early spring and reduced using a stainless steel, wood-fired evaporator, honoring centuries-old syrup-making traditions. Unlike our pure birch syrup, which has a high sap-to-syrup ratio and no added sugars, this blend is concentrated to 45 degrees Brix and then stabilized with an addition of either fructose or organic evaporated cane sugar (sucrose). This combination of concentrated sap and added sweeteners yields a slightly milder but sweeter syrup.
